BEST MARINATED TOFU RECIPE EVER
Serves 6
Preparation time=30 minutes plus at least 2 hours to marinate
Actual cooking time is 10-15 minutes
Marinade (double so there is extra for basting):
2/3 cup olive oil
1/4 cup red wine vinegar
5 medium gloves of garlic, minced
1/2 teaspoon of salt
lots of fresh ground pepper
1/2 teaspoon of oregano
1/2 teaspoon of thyme
1/2 teaspoon of basil
1/2 teaspooon rosemary
Prepare the following:
Cut 1 medium eggplant into 1 inch cubes
Cut 2 bell peppers into 2 inch strips
Cut 1 medium onion into 1 inch wedges
Cut 1 or 2 zucchini into 1 inch chunks
1 1/2 pounds of very firm tofu, cut into 1 inch cubes
one dozen cherry tomatoes
one dozen medium-sized mushrooms
Soak bamboo skewers for 30 minutes in cold water (this will keep them from burning on the grill).
Arrange the vegetable and tofu pieces on the skewers. Pull everything into a very large ziploc bag. Pour the marinade in the bag. Remove as much air as possible and seal the bag.
Marinate for 2 hours (or overnight).
Grill over hot coals or broil, basting with the marinade and turning every few minutes. The cooking time is not exact, so watch carefully and remove as soon as they seem done.
Baste one more time and serve hot with rice or pasta.
(The grilled tomatoes are my favorite—especially over pasta.)
I've made these and thought they were really yummy. Of course, the entire time I was making them Ben kept trying to talk me into putting meat on it so I have a feeling if I ever revisit this recipe with him than I'm going to have to produce some steak or be skewered myself.
