Crust:
1 pkg of yellow cake mix
1 egg
8 tablespoons of butter, melted
Prepare the crust by combining all the ingredients, mixing well with an electric mixer. Pat the mixture into the bottom of a lightly greased 9x13 baking pan. Try not to eat all of it, thereby forcing yourself to mix it up again (raw eggs be damned).
Filling:
1 8oz pkg of cream cheese, softened
3 eggs
1 teaspoon vanilla
8 tablespoons of butter, melted
1 16oz pkg of powdered sugar (4 cups)
In a large bowl, beat the cream cheese until smooth. Add the eggs, vanilla and buttter. Beat like a naughty child. Next, add the powdered sugar and mix well. Spread the filling over the crust and bake for 40 mintes. Make sure not to over bake as the center should be a little gooey.
Attempt to let it cool before serving. Serve with whipped cream.
Makes 24 skinny chick servings.
