Watergate Salad
I'm sure there's a good reason why this is called Watergate Salad. I, however, like to think the reason is that someone had to resign. Not resign as in "I give up the Presidency" rather, I mean someone said "Oh, ok, I'll eat the whole bowlful if I must."

2 cups of thawed Cool Whip, a package (4 serving size) of Pistaschio Instant pudding, 1 can (20 oz.) pineapple in juice (undrained), 1 cup mini marshmallows, 1/2 cup chopped walnuts (I sometimes used pecans).
Stir the pudding mix, pineapple with juice, marshmallows and nuts in large bowl until well blended. Gently stir in whipped topping. Refrigerate 1 hour or until ready to serve. Garnish as desired (sometimes I would sprinkle toasted or regular unsweetened coconut on top).
Now here is how I made it less calories - I used the low fat, reduced everything cool whip or you could even use Dream whip (which comes in a box and you make yourself and has way less calories), and of course I used the sugar-free, fat-free pudding which is sometimes hard to come by in that flavor so stock up. There is nothing you can do about the marshmallows and sometimes Dad and I liked to drain mandarin oranges and lessen the pineapple and have a combo of fruit.
One of my favorites when I was growing up. Two words ladies: portion control. Dish yourself up a bowl and shove the rest of it in the back of the fridge.
OR screw portion control and eat the whole batch. Whatever floats your boat.

This is such an American recipe! I remember the first time I saw Jello salad and couldn't quite believe it....to a British palate it sounds totally mad to call it a salad. Salad has lettuce in it...this sounds like yummy pudding.....but still a bit weird...sorry....though you probably think British food is nuts too
